- 2 quinces
- 2 cups of sugar
- star anise
- pinch of cloves
- enough water
Simmer until you have nice juicy poached quinces. Then leave on the stove for another hour until you get a slightly burnt toffee. Not too bad with ice cream if reheated in the microwave and poured over the top.
Tip
Pour the toffee onto a piece of wax paper before it cools. Otherwise you need to chip it out of the pot.
